6 slices bacon, diced
1/2 cup diced onion
4 cups thinly sliced Brussels Sprouts
1 large tart apple, peeled, cored and chopped
3/4 cup apple cider
1/2 cup maple syrup
1/2 tsp. fine sea salt
1/4 tsp. freshly ground black pepper
This recipe has Thanksgiving written all over it. Brussels sprouts are one of those foods that people think of when asked what their least favourite food is. But if they are having them served up like this, I doubt there would be any naysayers. Serve with Seared Salmon or Braised Lamb Shanks.
Fry the bacon in a large cast-iron skillet until crisp. Remove the bacon and set aside, leaving the bacon grease in the pan.
Add the onion and cook until softened. Add the Brussels sprouts, chopped apple, apple cider, salt and pepper. Cook over medium-low heat for about 20 minutes, or until the Brussels sprouts have really softened.
Add the maple syrup and cook over low heat for another 5 minutes until the whole mixture starts to caramelize. Taste for seasoning. Serve hot.
